Hi guys! I've got a chance to try a new way to cook eggplant in a different way but taste really good. At first, I was hesitant if I'm gonna do this since I haven't tried it before.
Eggplants is one of my newest vegetable being planted after my first batch of vegetables are all grown now, but this eggplant that I'm going to cook for today was from a nearby store. However, the common way of cooking eggplants is frying and boiling like mashed potato that's why I made my own version to level up this dish without spending extra money for meat.
I've seen some dishes and do research for other eggplant dishes, but all I've seen was most of the recipe requires you to mixed it with ground meat which I find it unnecessary. So I thought that why should I try to do make it just a regular fritters and the eggplant is the main dish not the meat of course (just a comparison though).
Here are my ingredients:
1 cup Flour
2-3 tbsp of cornstarch
1-2 cloves of garlic crushed and minced
1 tsp baking powder
1 egg (optional)
Salt and Seasonings
1 cup water (or less)
Palm Oil for frying
Procedure:
1.I wash the eggplant first, peel the skin and cut it into a smaller size tidbits. Soak in water with some salt set aside.
2.In a bowl combine flour, cornstarch, baking powder, salt and seasonings, egg(optional) and garlic. Then I poured put the water slowly until I achieve the right consistency.
3.I add the eggplants and adjust the saltness for better tasting.
4.I put some oil enough to cover the mixture and poured 1 tbsp.of the mixture. Fry it in medium high flame. Flip it over till golden brown. Drain the excess oil.
5.Repeat the process until your done. I served this while still hot with my homemade sweet and spicy vinegar.
